Composition: Merlot 56%, Cabernet Sauvignon 41%, Pinot Noir 2%, Cabernet Franc 1%
Deep, sweet-scented violet, cocoa and cassis with a reminder of mahogany. This pleasingly firm and plum-textured vintage tastes of caramel-chocolate and blackcurrant.
When to drink: Now through 2020.
Harvest: Picked at average grape sugars of 22.7 ° Brix.
Vinification: After fermentation in stainless steel, 55% of the wine was transferred to oak barrels, of which 6% were new, for full malolactic conversion.
Ageing: Eleven months, 55% in barrel, 45% in stainless steel tank. Bottled in August 2016.
Alcohol was measured at 12%, titratable acidity at 6.5 grams per litre and pH at 3.6.
