Composed of cabernet sauvignon (48%), merlot (25%), cabernet franc (12%), gamay (10%) and pinot noir (5%), harvested through October and November as sugar ripenesss reached an average 21.7° Brix.
All varieties were fermented individually in stainless steel. Following, 29% of the total was transferred to older oak barrels (19 to 1 ratio French to American oak). After malo-lactic fermentation and seven months’ ageing, the wine was blended and bottled. Alcohol was measured at 12%, titratable acidity at 6 grams per litre and pH at 3.59.
