Inviting aromas of strawberry, cherry, mocha and leather with smoky, earthy and mineral undertones.
The plush mouthfeel is livened by bright acidity. Flavours indicate black cherry, currant and dark chocolate with a toasty finish. Scarpata is structured to age eight years or more.
Cabernet sauvignon grapes from Rennie Estates’ Heron Pond Vineyard were picked on October 24th as harvest sugars reached 21.7˚ Brix.
Following primary fermentation, cabernet franc and cabernet sauvignon grape skins that had dried to an average 29.8° Brix were introduced to soak ripasso-style on the wine.
After ageing for twenty months in seven French oak barrels, four of which were new. The finished wine was bottled unfiltered with alcohol measuring 15.5%, titratable acidity 6 grams per litre and pH 3.84.
