The blend, 77% cabernet sauvignon and 23% merlot, was made from grapes harvested October 20th at average 21.8° Brix. After primary fermentation in stainless steel the wine was transferred to French oak barrels (22 % new) to finish malolactic fermentation and age for seven months. At the time of bottling in August 2015, alcohol measured 12.5%, residual sugar 1.6 grams per litre, titratable acidity 6 grams per litre and pH 3.7.
Total production was 226 cases.
This versatile red would pair perfectly with barbecued pork tenderloin, roasted chicken breast, grilled chicken caesar salad.
