When harvested from the Malivoire Winery Estate Vineyard, the grapes’ sugars averaged 19.5° Brix. Fermentation and 12 weeks to clarify in stainless steel preceded bottling in December. Alcohol was measured at 12.5%, residual sugar 0, titratable acidity at 5 grams per litre and pH at 3.2. Production filled 705 cases. Will drink well through 2019.
