Whole-cluster pressed and fermented in older French oak barrels, the wine after bottling was transferred to our original subterranean cellar beneath Martin Malivoire’s Moira Vineyard, vinified in the Traditional Method and aged on the lees in bottle for twenty-five months.
At dégorgement in August 2015, alcohol measured 12% and residual sugar 12 grams per litre.
Only 80 cases were bottled.
