Fresh, gently perfumed aromas identify strawberry, watermelon, pear and honey with a mineral shadow.
Animatedly bubbly in the mouth, this sparkling rosé presents apple, wild cherry, peach and a long, tangy finish hinting at lemon cream and biscuit.
Bisous Rosé is 100% estate-grown Beamsville Bench pinot noir, handpicked in the fall of 2012 at 18.1° harvest Brix.
Whole-cluster pressed and fermented in older French oak barrels, the wine after bottling was transferred to our original subterranean cellar beneath Martin Malivoire’s Moira Vineyard, vinified in the Traditional Method and aged on the lees in bottle for twenty-five months.
At dégorgement in August 2015, alcohol measured 12% and residual sugar 12 grams per litre.
Only 80 cases were bottled.
