This vintage is earthier in character, with scents of blueberry, raspberry and dried violet with rustic undertones. The texture is zesty with medium tannins. A taste finds black cherry and cranberry with spicy accents.
Picked by hand at the Moira Vineyard on September 13th as grape sugars averaged 20.4° Brix.
For this micro-cuvée, after hand-sorting, 90% of the grapes were destemmed and the remainder kept in whole clusters. All were layered into a stainless steel tank.
Primary fermentation using indigenous yeast lasted 15 days. The wine was transferred to neutral French oak barrels to complete malolactic fermentation and age for five months.
At the time of bottling, April 2019, the wine was measured at 12% alcohol, 0.2 grams per litre residual sugar, 5.7 grams per litre titratable acidity and 3.53 pH.
Only 5041 cases were produced. Enjoy now to 2025.
