Aromas capture blueberry, cassis, dark cherry and toasted raisin bread.The wine is fresh and firm, and tastes of cherry, raspberry, raisin and vanilla.
Picked by hand from the Mottiar Vineyard on September 14th as grape sugars averaged 20.8 ° Brix.
The grapes were hand-sorted and divided for a two-week fermentation using indigenous yeast. The majority was destemmed, crushed, and co-fermented with a smaller portion of whole clusters.
The wine was transferred to neutral French oak barrels to age for nine months.
At the time of bottling, August 2019, the wine was measured at 12.5% alcohol, 0 gram per litre residual sugar, 6.1 grams per litre titratable acidity and 3.81 pH.
Only 48 cases were produced. Enjoy now to 2025.
Serve near 14° C with lamb navarin, roast chicken, roasted beets, mushroom risotto or crispy duck.
