Heightened delights for the nose and mouth recall baked apple crisp, pineapple, pear syrup, honey and almond, enriched by caramel and brown butter. The palate finds a bold, creamy texture with refined, tingly accents.
The grapes were hand-harvested October 1st from the mature vines of our Moira Vineyard. It was the last of our chardonnay to be picked that year, at average grape sugar 22.6° Brix.
The juice, pressed from destemmed grapes, fermented in five French oak barrels (one first use, two second use and two neutral), with monthly battonage for the first five months.
The barrels were blended and the wine integrated for a further three months in a large oak tun. After just over a year in oak, the finished wine was bottled in December 2021.
Only 200 cases were produced. Enjoy now through 2028.
Dry: 1.5 g residual sugar
At the time of bottling, alcohol measured 13%; residual sugar, 1.5 grams per Litre; titratable acidity, 6.2 grams per Litre and pH: 3.45.
Food Companions: Serve near 10 ° and enjoy with cedar plank-smoked fish, Steak Bearnaise or corn chowder.
