Winemaker's Notes:
Plum and assorted dark fruits combine with tobacco and pencil shaving tinges for a luscious aroma with a wink to the “sauvage”.
The taste is deep and mouth filling, flavoured of blueberry, fruitcake spices and fennel with deftly balanced oak elegance.
Picked at Quarry Ridge Vineyard on September 27th as grape sugars averaged 21.1° Brix. Still tended by the Reimers, this block was planted by the family in 1972.
After primary and full malo-lactic fermentation in stainless steel, the wine aged 17 months in American oak barrels, of which 18% were new, before being bottled in March 2022.
Dry: 0 g/L sugar
At the time of bottling, alcohol measured 12%, 0 g/l residual sugar, 8 g/l titratable acidity and 3.5 pH.
Cellaring Tips: Enjoy now to 2029. If you haven’t had the opportunity to enjoy a back vintage Old Vines Foch yet then now may be the ideal time to start the process. Simply squirrel away one or two bottles a dark corner of your home that has moderately constant temperature (a closet floor does nicely). Perhaps even add a note with your intended 'When to Open Date' like ... save until Dec 2025 or even longer if you’re feeling adventurous.
Of course, make sure that you have enough to enjoy while you wait!
