2012 Stouck Meritage INSIDERS

Cabernet Sauvignon 50%, Merlot 50%,
Darkly scented of plum, cherry, chocolate pudding and pipe tobacco with notes of cedar and spice. Savour the deep, lavish mouth feel and flavours of black cherry, cocoa, fruit cake and raspberries-and-cream.
Picked at the Stouck Family Vineyard as grape sugars averaged 25° Brix.Cocoa, black cherry, blackberry, blueberry, plum pudding, Christmas cake, mocha, black tea, menthol tobacco, roasted spices. Round and rich - almond cluster, cooked cherry, blackberry, plum, truffle, black licorice, cedar.
Composed 63% of merlot and 37% cabernet sauvignon. Two harvest passes September 25th and October 9th, yielded average grape sugar of 24.5° Brix. After primary and full malolactic fermentation in oak 5-hL cuves, the wine was barrel-aged for 18 months.
The barrel selection was 65% American and 35% French, with a two-to-one ratio of old barrels to new. When the finished wine was bottled in May 2014, alcohol measured 13.5%, residual sugar 0.3 grams per litre, titratable acidity 5.9 grams per litre and pH 3.65.
Only 195 cases were made.

Best enjoyed near 17° C. Stuffed mushroom ravioli with grilled chicken, a gourmet burger with gorgonzola and caramelized onion, spiced grilled tiger prawns or lamb shank.
