2020 Demo Series Sauvignon Blanc Skin INSIDERS
The nose of this one is a revolving door of so many scents: grapefruit, lemon lollipop, white pepper, lavender, beeswax, straw and flinty whetstone. A sip draws deep, rich and creamy, uplifted by fresh acidity. Flavours construe green apple, crabapple, passion fruit and a twist of licorice that persists in the finish.

Sourced from a mature lakeshore-area site on September 23rd as grape sugars averaged 22.8° Brix.
After hand-sorting and de-stemming, the crushed berries fermented for 11 days, skins and juice together, in a ceramic “orb” prior to pressing.
After a further six months in a mature French oak barrel, the wine filled 25 cases in April 2021.
At the time of bottling alcohol was measured at 12.5%, residual sugar at 0 grams per litre, titratable acidity 8.5 grams per litre and pH at 3.55
