Winemaker's Notes:

The swirled glass radiates sliced green apple, poached pear, pineapple, lime, passion fruit and citrus peel, accented by floral and flinty notes.  Flavours reminiscent of pear, applesauce, meyer lemon, starfruit and vanilla custard fill the mouth.

It’s creamy-structured with an enlivening brightness that holds from entry to clean finish.   
Hand-picked from the Mottiar Vineyard on September 18th at 20.5° Brix average grape sugar.

The grapes were whole-cluster pressed, after which the chardonnay juice fermented using spontaneous yeast in neutral (four-to-eight-year-old) French oak 300-Litre “hog’s-head” barrels.  During eight months on the lees, 80% of the wine completed malolactic conversion.

161 cases were bottled in July 2021.

Alcohol: 12%  Titratable Acidity:  6.2 grams per Litre  pH:  3.2

Dry: 3 g/L residual sugar
