The nose is an elaborate blend of cinnamon, clove, pepper and other spice with violet, mocha and tobacco. Nicely maturing tannins give this wine an ample, firm, silky mouth feel. Flavours pronounce blackberry, dark chocolate, vanilla and eucalyptus.
Vinification: Picked at the Stouck Family Vineyard on November 10th as grape sugars averaged 21.7° Brix. After stainless steel fermentation all of the wine was transferred to age more than two years barrel.
Ageing: Twenty-nine months in barrel. Two-thirds of the wine aged in older American oak. The remaining one-third rested in new French oak.
At the time of bottling in April 2016, alcohol was measured at 13.4%, residual sugar at 1 gram per litre, titratable acidity at 5.5 grams per litre and pH at 3.85.
