Fragrances combine cherry, blackberry and fruitcake with sweet chocolate pudding, spicy tarragon and earthy moss scents.
It is fresh and concentrated in the mouth, tasting of black cherry, raspberry, roasted red pepper, anise and smoky tobacco.
Picked at Wismer Vineyard on October 15th as grape sugars averaged 21 ° Brix. After stainless steel fermentation, the wine was transferred to French oak barrels. The wine completed malolactic fermentation and aged for a total of 14 months.
Aged ten months in French oak, with a ratio of 3 to 1 used barrels to new, followed by four months in neutral barrel.
At the time of bottling, alcohol was measured at 12.5 %; residual sugar at 2 grams per Litre and titratable acidity, 6.8 grams per litre and pH: 3.49
Only 142 cases were bottled.
Serve near 14 ° C with Cornish hen or quail and risotto and grilled asparagus, or with fire-roasted tomatoes and wild mushrooms and rosemary and other fresh herbs.
