2017 Scarpata Cabernet Sauvignon
Opulently scented of plum, black cherry, cranberry and dried fig, while chocolate and vanilla refinements bring impressions of Black Forest Cake.
Ripe tannins, oak ageing and ample alcohol buttress weight, texture and flavours that are compatibly lavish.
Tastes of cherry, blackberry and dark chocolate persist for a prolonged, rewarding finish.
Cabernet Sauvignon grapes from Heron Pond Vineyard were picked November 7th at 22.2° Brix. Following primary fermentation, skins from Rennie Estate’s “G” Assemblage (appassimento Cabernet Sauvignon and Merlot) were added to this wine. The resulting extended fermentation created, after pressing, a “Ripasso-style” wine of outstanding intensity and depth.
The wine was transferred to French oak barrels, 35% of which were in first use, to undergo malolactic fermentation and age for 28 months. Scarpata was bottled unfiltered in August 2020 with alcohol measuring 14.5%, residual sugar 0.4 grams per Litre, titratable acidity 5.7 grams per litre and pH 3.92.
Production filled 138 cases of 750-mL bottles.
