Winemaker's Notes:
Fragrant of Niagara cherry, blackcurrant, floral apple blossom and herbs and spice. It’s silky and intensely fruity with flavours of cranberry, blueberry, raspberry and plum with a mineral underlay.
Made of grapes from our winery Estate site, harvested October 17th at average 20.8° Brix.
Whole grape clusters were directed to a stainless-steel tank. Purged of oxygen, the tanks were sealed for one week of semi-carbonic maceration. Primary fermentation under wild yeast was followed by 100 % malo-lactic conversion. The wine aged for seven months in neutral 300-Litre French oak puncheons.
Only 134 cases were bottled in May, 2020. Enjoy now to 2023.
At the time of bottling, alcohol measured 12.5%, residual sugar: 0.4 grams per litre titratable acidity: 6.8 grams per litre and pH: 3.44
Dry: 0.4 g/L residual sugar
