Winemaker's Notes:

Merlot 57%, Cabernet Sauvignon 43%

Plum and other dark fruits are delivered to the nose with spicy, earthy and woody undertones.  Deep, luscious and boldly flavoured, it tastes of black cherry and mocha, leaving a toasty, nutty aftertaste.

The two varieties were picked separately, Merlot on October 19th and Cabernet Sauvignon on November 4th at the Stouck Family Vineyard.

The Merlot and Cabernet Sauvignon were vinified separately, being crushed and sent to 3,000 Litre oak tanks.  After primary and malolactic fermentation, the component wines aged in equal portions in American and French oak barrels, of which 15% were in first use. 

The wine was blended after 16 months and bottled in April 2021. 

When the finished wine was bottled, alcohol measured 13%, residual sugar 0 grams per litre, titratable acidity 6.2 grams per litre and pH 3.62.

Dry: 0 g/L residual sugar

Lifted aromas of exotic spice and beguiling incense give way to black cherry/berry fruit on the nose of this delectable, red blend. It blankets the palate with a structured and textured surge of lively, refreshing red currant and pie cherry intertwined with piquant spice and ripe black raspberry and sweet mulberry underpinned by perceptible and acceptable, fine-grained, polished tannin. It’s medium-plus bodied with good mouthfeel and deft balance throughout while the finish and aftertaste showcase the persistent purity of fruit from the palate. The price-quality balance tips in your favour; pick up a few and pour with grilled gourmet sausage or a prime cut of beef tenderloin.

he grapes are sourced from assistant winemaker Dan Stouck’s family vineyard in the Lincoln Lakeshore sub-appellation. It’s a blend of 57% Merlot and 43% Cabernet Sauvignon and was aged in equal parts of French and American oak, 15% of which was new oak. It has a savoury, woodsy nose of black cherries, brambly raspberries, plums, black currants and spicy accents. It’s bold and structured on the palate with evident tannins and the full range of anise, cassis and currants with black cherries, rich barrel spice notes, earthy notes, spice and a vibrant finish. Can cellar 5+ years.
