Winemaker's Notes:
Cherry syrup, blueberry, plum kirsch and floral, spicy and earthy aromas decorate the nose. A sip finds a fresh, velvety, juicy texture and flavours of dark cherry and cranberry with a trace of cocoa.
Grape clusters meeting the Winemaker’s criteria were picked by hand on the 25th of October. Grape sugars averaged 20° Brix.
The newly harvested grapes fermented, half as whole clusters and half as crushed must. Post-ferment, the largest (90%) share aged in neutral oak barrels and the remainder in a stainless steel tank.
After seven months, 114 cases were bottled in May, 2020. Enjoy now to 2023.
At the time of bottling, alcohol measured 12.5%, residual sugar: 0.3 grams per litre titratable acidity: 7.4 grams per litre and pH: 3.43
Dry: 0.3 g/L residual sugar
