Super G is a 100% cabernet sauvignon appassimento-style wine. Its penetrating nose highlights cassis, cherry jam, violet, cigar box and earthy dried spices.
Rich, ripe tannins provide a provocative, seductive mouth feel followed by a tsunami of flavors redolent of kircsh, black raspberry, fig, cocoa and cinnamon.
“Super G” is made from hand-harvested cabernet sauvignon, picked November 1st on Rennie Estates’ Heron Pond Vineyard. Sugar ripeness, 24.2° Brix at harvest, increased to 29.2° as the grapes chamber-dried for 68 days.
The dried fruit was vinified for 5 weeks in a small tank, undergoing gradual primary and full malo-lactic fermentation. The free run juice was transferred to mainly new French Oak barrels and aged for 24 months.
When bottled in April 2019, alcohol was measured at 16.5 %, residual sugar 1 gram per Litre, titratable acidity 6 grams per Litre and pH 3.88.
Total production was only 41 cases of 750-mL bottles and only nine 6-bottle cases of 1.5-L “magnums”. Magnums are not yet available - ask for details.
