2019 Paradox Pinot Noir
Luxuriously fruity aromas combine black cherry, blueberry, strawberry syrup and whispers of maple and earthy mushroom with spicy clove and nutmeg.
The texture is luscious and generous, and flavours capture Cherries Jubilee, raspberry compote, coconut and cinnamon, leaving truffle and spice to linger.
Pinot noir clusters were hand-harvested October 21st from mature (over 20-year-old) vines at Rennie Estate’s Heron Pond Vineyard, at average sugar ripeness of 24.3° Brix.
Most of the fruit was de-stemmed and crushed for primary fermentation, with a smaller portion added in whole clusters. The must was punched down twice daily for 20 days before the wine, extracted using a small basket press, was transferred to two French oak barrels (one second fill, one fourth fill) to age 18 months.
Forty-nine cases were bottled unfiltered in June 2021.
At the time of bottling, alcohol measured 14.5%, pH 3.7, titratable acidity 6.5 g/L and RS 0 g/L.
Dry: 0 g/L residual sugar
Production was limited to 49 cases.
