Pressed from grapes grown specifically for this wine, composed of three grape varieties: 65% cabernet franc, 24% pinot noir and 11% gamay that were harvested as grape sugars reached 21.5° Brix.
The berries were destemmed, crushed, and sent to tank. The mixture of crushed grapes and free-run juice cold-soaked for 24 hours and was gravity-drained to press. Cold-fermentation, settling and aging were completed in stainless steel before bottling in February 2018.
At the time of bottling, alcohol measured at 12.5%, residual sugar 5.0 grams per litre, titratable acidity 6.9 grams per litre and pH 3.48.
Chill to near 10° C and serve with chicken wings, barbecued poultry or white pizza.
