Scented of lime zest, pear, candied pineapple, and maraschino cherry. Refreshingly tart, Vivant delivers flavours of lemon-lime, strawberry, cranberry, clementine and grapefruit.
Early morning, picked by hand at the Malivoire Estate vineyard September 26th as grape sugars averaged 21° Brix. These pinot noir grapes were pressed immediately in whole clusters. The juice was chilled and cool-fermented in a wide-profile stainless steel tank.
After settling, for 10 weeks, the wine was bottled in December 2017.
Alcohol was measured at 12.5%, residual sugar 1.5 grams per litre, titratable acidity at 8 grams per litre and pH at 3.3.
