Picked at the Moira Vineyard on October 6th, these were the first grapes of the 2017 vintage harvested from this block. Grape sugars averaged 21° Brix.
Hand-harvested from 22-year-old chardonnay vines, the grapes were sorted and pressed in whole clusters. After chilling in a horizontal “milk tank”, the juice was transferred to stainless steel barrels. The wine completed primary fermentation followed by intermittent battonage. There was no malolactic fermentation.
