The nose projects peach, pear, ginger and honeysuckle with citrus and herbal undertones. This wine is racy and vivid, offering green apple, lemon, citrus and mineral flavours.
Chill to 7 ° C and pair with oysters, mussels and other shellfish, or foods that benefit from a sqeeze of lemon or lime.
Vinification: 100% Melon de Bourgorne grapes. Grape sugars averaged 20.9 ° Brix when harvested October 5th from the Malivoire Estate Vineyard.
Primary fermentation in stainless steel preceded settling and ageing in steel barrels, specially made for optimum lees contact, with thrice-weekly stirring.
Bottling in December 2017 produced only 154 cases.
