Winemaker Notes:
Aromas remind of Niagara tree fruits including pear and apple, and a trace of pineapple. The texture is lively but firm, and flavours hint of honeydew melon, lemon meringue and vanilla custard with citrus and mineral undertonesPicked at the Moira Vineyard on September 21st as grape sugars averaged 21.7 ° Brix.
Hand-harvested chardonnay grapes were sorted and pressed in whole clusters. One-half of the juice was fed into French oak barrels and the other half into stainless steel barrels. There, the wine completed primary wild yeast fermentation and partial malolactic fermentation. After 20 months, 62 cases were bottled in March 2020.
