LIBRARY 2013 Stouck Cabernet Sauvignon INSIDERS
Aromas include cocoa, sage, leather and tobacco. With a smooth, silky, juicy mouth-feel, this vintage delivers pronounced flavours of black cherry, blackberry, seared mushroom, black licorice, pepper and vanilla.
Vinification: When harvested at the Stouck Family Vineyard on November 7th as grape sugars averaged 21.6° Brix. After a 20-day stainless steel fermentation all of the wine was transferred to American oak barrels, 33% of which were in first use. Malolactic fermentation was completed in barrel. Fifteen months in barrel before bottling.
At the time of bottling in August 2015, alcohol was measured at 12.5%, residual sugar at 0.3 grams per litre, titratable acidity at 5.4 grams per litre and pH at 3.86.
