Below are the notes from the original release of this wine. This is the last vintage of Cabernet Sauvignon from the Stouck farm since 2016.

Fragrant of dark fruits, cherry concentrate, cassis, mocha and tobacco leaf. A taste is rich and mouth-filling, with savoury flavours of plum, wild berries and chocolate. Fruity and earthy aftertastes linger long on the palate.
Picked at the Stouck Family Vineyard on November 1st as grape sugars averaged 24.6° Brix.
After stainless steel fermentation (primary and malo-lactic), two-thirds of the wine was transferred to older American (67%) and French (33%) oak barrels to age for 18 months. The other one-third, after eight months in new oak, was transferred to finish ageing in neutral oak. After a total of 18 months in barrel, the wine went to bottle in April 2018.

At the time of bottling, alcohol was measured at 13%, residual sugar at 1.5 gram per litre, titratable acidity at 6.5 grams per litre and pH at 3.69.

An eclectic bevy of aromas leap from the glass—pipe tobacco, mocha, and black bramble berry interlaced with hints of grilled savoury herbs and exotic incense. A surge of flavours blanket the palate with black raspberry and black plum intertwined with pie cherry and oodles of tangy pizzazz. It’s medium-plus bodied with generous mouthfeel and soft, ripe tannin for underpinning. This showcases persistent purity of fruit, is balanced on a pin and delivers a luxurious finish and aftertaste decorated with palate replays of fruit and flavour. Drink now to 2025. (Vic Harradine)
