Darkly scented of plum, cherry, chocolate pudding and pipe tobacco with notes of cedar and spice. Savour the deep, lavish mouth feel and flavours of black cherry, cocoa, fruit cake and raspberries-and-cream.
Picked at the Stouck Family Vineyard as grape sugars averaged 25° Brix.
Component varieties were crushed and divided, some going to steel tank and some to oak, for primary fermentation. The wine was racked to French (75%) and American (25%) oak barrels to finish malolactic conversion. Of the total, roughly 40% aged in new barrels. After eight months, the whole was transferred to older barrels for a further ten months. In April 2018, we bottled 226 cases.
When the finished wine was bottled, alcohol measured 13.5%, residual sugar 0.5 grams per litre, titratable acidity 6.8 grams per litre and pH 3.67.
