Fragrant of cherry liqueur, raspberry, anise, bay leaf, cedar and smoke.A taste finds the wine ripe, round and supple, flavoured of cooked dark fruit, blackcurrant and red bean, with gentle spicy notes.
Picked at Wismer Vineyard on October 19th as grape sugars averaged 23.5° Brix.After stainless steel fermentation, the wine was transferred to French oak barrels to complete malolactic fermentation and age for 14 months.
The larger portion aged in older barrels, but 23% of the wine spent 9 months in new oak. At the time of bottling, alcohol was measured at 13.5 %; residual sugar at 0.5 grams per Litre and titratable acidity, 5.9 grams per litre and pH: 3.53.
Only 215 cases were bottled in January 2018.
Serve near 14° C with peppercorn steak, smoked duck breast, wild boar or bison.
