Aromas call to mind apple blossom, cherry pie filling, raspberry and almond with an earthy undercurrent. Sporting a juicy mouthfeel with spry acidity, it tastes of mixed field berries, cherry and cranberry.
Composed of grapes from Niagara-on-the-Lake and Beamsville Bench vineyards, harvested at average 20° between the 10th and 13th of October.
After primary fermentation in stainless steel, the wine remained in tank for five months. Further ageing followed in a pair of 1000-Litre oak tuns, before bottling in July 2018.
At the time of bottling in February 2017, alcohol was measured at 12%, residual sugar at 3 grams per litre, titratable acidity at 7.8 grams per litre and pH at 3.3.
