A fruit salad for the nose, with peach, banana and honeydew melon with underlying traces of flint and cut straw. A taste is clean, fresh and vibrant with bursts of pineapple, lime popsicle, peach and a mineral kiss.
Grapes from 18 year old vines were taken at 20° Brix sugar when harvested October 2nd from the Malivoire Estate Vineyard. After pressing in whole clusters, the juice was sealed in stainless steel tanks. CO2 produced during fermentation was trapped, introducing a gentle effervescence to the wine, which was bottled in December 2017.
At the time of bottling, alcohol measured at 10%, 60 grams per litre residual sugar, 9.1 grams per litre titratable acidity and 3.12 pH.
Goes cheerfully with salads, fruit salads, breakfast and brunch foods or salty dishes with feta or blue cheese. Chill to 5° C.
