Impressions of Niagara orchard fruits: dark plums, blackberries, cooked cherries and raspberry jam, embroidered by threads of mint and red licorice. A sip is supple and juicy to the palate. Fine, firm tannins bolster mouth-filling plum, back cherry and beetroot flavours. Caramel and spice linger on the finish.
Picked at the Stouck Family Vineyard on November 16th as grape sugars averaged 22.3° Brix.
After primary and full malo-lactic fermentation, the wine was divided to age in five barrels (two neutral French oak, two new American oak and one neutral American oak). After nine months, the entire lot was transferred to a three-year-old 1,000-Litre “Garbellotto” cask to age for a further five months. 119 cases were bottled in May 2019.
Dry: 0.5 g residual sugar
At the time of bottling, alcohol measured 12.3%, residual sugar 0.5 grams per litre, titratable acidity 6.3 grams per litre and pH 3.58.

The wine was divided in five barrels to age — two neutral French oak, two new American oak and one neutral oak. After 8 months, the entire lot was transferred into a used 1,000 cask to age for a further five months. It has an elegant nose of black cherries, blackberries, plums, toasted vanilla, cigar box cedar, anise and barrel oak spices. It’s rich and deep, structured and layered on the palate with ripe dark cherries, cassis, wild raspberries, plums and a range of elegant spice notes. It has a long, lush finish and the potential to improve for 7+ years. A really nice Merlot.
