Multilayered aromas of dark fruits, cherry syrup, spice box, caramel and breezy forest glade.
The mouthfeel is silky, generous and bursting with flavors of black cherry, wild red currant, Niagara strawberry and toasty vanilla.
Pinot noir clusters were hand-harvested on September 20th from mature (20-year-old) vines at Rennie Estate’s Heron Pond Vineyard at an average sugar ripeness of 21.5° Brix.
After a gentle crush, whole clusters were added to the tank and punched down twice daily in small batches for two weeks before being transferred to French oak barrels. Paradox aged for 22 months and completed malo-lactic conversion before being bottled unfiltered in August 2020.
At the time of bottling, alcohol measured 13%, pH 3.8, titratable acidity 5.2 g/L and RS 0.3 g/L.
