I like the zesty acids and light but taut frame (12% alcohol declared), and lingering finish. There’s also notable salinity on offer, encouraging additional sips to quench that thirst. A benchmark.
Delicate maraschino cherry, melon, pear, citrus and apple blossom touch the nose. Vibrant with a fresh salinity, the wine tastes of strawberry, cranberry, pink grapefruit and lime.
100% Estate-grown pinot noir was hand-picked at the cool temperature of daybreak, September 13th to 16th, as grape sugars averaged 20.5° Brix.
The grapes were pressed in whole clusters immediately after picking. The juice was chilled in a horizontal stainless-steel tank prior to cool-fermentation and settling. It was bottled in December 2018.
At the time of bottling, alcohol measured 12%; residual sugar: 0 grams per litre; titratable acidity: 7.2 grams per litre pH: 3.26
Enjoy now to 2021. Serve at temperatures near 11° C with soft cheeses and a variety of fish and shellfish.
