2020 Demo Series Pinot Gris INSIDERS
An opulent copper-salmon hue is the first hint of what is to come. Alluring aromas capture freshly sliced apple, apricot, melon and strawberry, accented by citrus peel and floral tones.
It rests on the palate with a tangy, fruit-fleshy texture as flavours suggest grapefruit, peach and fig, with a smoky tinge lasting through the refreshingly dry finish.
Enjoy now through 2025.
Picked by hand from mature vines of the Malivoire Estate Vineyard’s south block September 17th as grape sugars averaged 20° Brix.
After crushing and destemming, the juice and skins soaked together in a chilled tank. After 48 hours, all juice was pressed from the skins for primary fermentation.
Given six months to settle, the wine filled 30 cases in April 2021.
At the time of bottling alcohol was measured at 12.1%, residual sugar at 0 grams per litre, titratable acidity 7.5 grams per litre and pH at 3.42
Dry: 0 g/L residual sugar
Serve near 8° C with roasted or barbecued chicken.
