Winemaker's Notes

100% Cabernet Franc

Aromas of black raspberry, plum, baked blueberry and elderberry, spiced by cinnamon and violet, invite the nose to a long, pensive draw.  
The mouthfeel is luscious and intense.  
Dark fruit flavours with cherry, raisin and cocoa translate to the palate, trailing to a toasty, spicy, herbal finish.

Picked at the Wismer Vineyard October 13th as grape sugars averaged 24.1° Brix.

Freshly picked grapes were destemmed before primary fermentation in two large oak cuves.  After, 12% of the wine drained to new French oak puncheons and the rest to more neutral (2nd – 6th use) French oak barriques.  The whole was blended back into mature barrels to age for an additional 3 months before bottling in December 2021.

At the time of bottling, alcohol measured 13.5%; Residual Sugar 0 g; Titratable Acidity 7.2 grams per litre; pH 3.45

Quite liquid chalky and multi-berry aromatic cabernet franc here with Wismer’s spot on pick at the forefront of what’s in store. Showing that 2020 development, full phenolic maturity and really established tannins, neither green nor austere. A moment of red pepper jam and Chinon earthiness, metallics too, plus musk and playfulness. Needs an additional year for the clay chalkiness to integrate, along with the newly announced state of the wood. Last tasted April 2022

Alluring aromas of juicy, dark cherry-berry fruit interlaced with grilled savoury herbs, baking spice and earthy notes abound on the nose of this juicy gem. It races over the palate with plenty of spicy, lip-smacking tang and nerve and verve acidity along with flavourful dark, juicy, palate fruit-flavours with dark Bing cherry, black currant and dark plum compote to the fore. It’s good to pour now after a two-hour aeration decant.
