2021 Gewürztraminer

Winemaker's Notes:

Pineapple and lychee fruit tones are accented by ginger, cassis, white pepper, cinnamon and lavender.
Sprightly and direct on the palate, a taste finds more pineapple-lychee-ginger, plus pear, apricot and a twist of lime.

Estate Vineyard west block clusters were hand-picked October 15th as grape sugars averaged 19.9° Brix.

Once destemmed the crushed grapes, including skins, were held for an overnight cold-soak.  The wine was pressed for fermentation and settling in stainless steel, producing 132 cases for bottling in February 2022.

Dry: 2.5 g/L residual sugar

At the time of bottling alcohol measured 12.5%, residual sugar 2.5 g, titratable acidity  5.7grams per litre and pH 3.48 .

Production of only 132 cases.

Serve near 8° C with chicken and dried apricot tajine, Thai curries with a coconut milk base, duck liver paté or waldorf salad.
