Gracefully scented of melba toast, brioche, citrus fruits, bruised apple and almond. Foamy and spry in the mouth, a taste perceives biscuit, meyer lemon and white grapefruit with toasty complexity.
Composed of 70% pinot noir and 30% chardonnay; Both varieties were grown on Beamsville Bench estate sites, and hand-harvested in fall 2011 at average 18.8° Brix.
The grapes were pressed in whole clusters and the juice fermented in neutral French oak barrels. Following tirage in July 2013, the wine was transferred to our original subterranean cellar beneath the Moira Vineyard, spending 60 months on the lees.
Bisous Anniversary Brut was vinified in the Traditional Method and disgorged in July 2018 to produce 25 cases.
At dégorgement, alcohol was 12% and residual sugar 2 grams per litre.
Only 25 cases of were bottled.
