The deep garnet hue bespeaks the intense aromas to follow, capturing dark cherry, maple syrup, stewed tomato, cassis and cedar shavings.
Flavours embrace sultana raisin, cooked cherry, plum, beetroot, roasted pepper, cocoa and cinnamon.
“Super G” will redeem ten or more years of cellaring.
“Super G” is made entirely from cabernet sauvignon harvested October 24th on Rennie Estates’ Heron Pond Vineyard. Sugar ripeness, 21.7° Brix at harvest, increased to 29.8° Brix as the grapes dried for 86 days in a specially-constructed chamber. A gradual one-month fermentation brought alcohol to 16 %, leaving 2.7 grams per litre residual sugar. The wine was racked to two first-use French oak barrels to complete malolactic fermentation and ageing. After 21 months the wine was bottled in December 2015 at 6.7 grams per litre titratable acidity and 3.73 pH.
Total production was 47 cases.
