Inviting aromas of black and blue fruits, dark fruitcake, mulled spices, sultana raisin, hazelnut and cedar.
The texture is sumptuous but spirited. Flavours resemble dark cherry, plum, blackberry, cocoa and vanilla. Scarpata is structured to age for eight years or beyond.
Cabernet sauvignon grapes from Rennie Estates’ Heron Pond Vineyard were picked on October 31st. Following primary fermentation, dried cabernet sauvignon grape skins were introduced to soak ripasso-style on the wine. Following, the wine was transferred to four French oak barrels, one of which was in first use, to undergo malolactic fermentation and age for twenty-one months.
The finished Scarpata was bottled unfiltered, with alcohol measuring 14.9 %, residual sugar 0.5 grams per litre, titratable acidity 5.9 grams per litre and pH 3.7.
Production was limited to 103 cases.
