Scented of dark fruit, black olive, seared caramel and earthy menthol. Athletic tannins support a rich, round structure worthy of ten or more years of cellaring.
Flavours suggest rum cake, blackberry, black coffee, cocoa and spicy clove.
“Super G” is made from hand-harvested cabernet sauvignon, picked October 31st on Rennie Estates’ Heron Pond Vineyard. Sugar ripeness, 22° Brix at harvest, increased to 27.6° as the grapes chamber-dried for 86 days. Gradual fermentation brought alcohol to 16%, leaving 0.5 grams per litre residual sugar.
The wine was racked to two new French oak barrels for malolactic fermentation and 21 months’ ageing. The wine was bottled in December 2016 at 5.9 grams per litre titratable acidity and 3.8 pH.
Total production was 49 cases.
