Winemaker's Notes

Arresting, honeyed aromas of bruised apple, pear, earthy chanterelle and newly baked brioche. Fine, spirited effervescence delivers a rich mid-palate, and flavours of green apple, ripe pear, citrusy lime and orange zest, with an underlying and lasting brioche.

Composed 63% of chardonnay and 37% pinot noir; Both varieties were grown and hand-harvested from the Moira and Mottiar sites of the Beamsville Bench.

Disgorgement, in April 2022, followed 36 months on the lees.

Vinification Notes

Bisous was vinified in the Traditional Method. The main component wine, comprising 78% of the whole, was from whole-cluster-pressed 2018 vintage grapes that had fermented in mature (eight years or older) French oak barrels.

This was augmented with the addition of a second base wine, blended and reserved from earlier vintages. Once bottled, the wine was transferred to our original cellar beneath the Moira Vineyard to undergo secondary fermentation.

Chill to near 8° C, pairs well with seafood, cheese and light desserts.
