2021 Mottiar Chardonnay

Winemaker's Notes:

The multi-faceted nose tells of candy apple, citrus, honey and vanilla.  Plush, silky and tingly on the palate, a drop tastes of green apple, apricot and lemon, gliding to a clean, refreshing finish.

Harvested from the Mottiar Vineyard on October 7th at 21.9° Brix average grape sugar.

From press, the juice filled mature (five-to-ten-year-old) 300-Litre French oak barrels. Equal portions fermented under wild and cultured yeast. Completing partial malo-lactic conversion, the wine aged in barrel for nine months in total before 156 cases were bottled in July 2022.

Dry: 0 g/L residual sugar

At the time of bottling, alcohol measured 12%, residual sugar 0 grams per litre, titratable acidity 6.7 grams per litre and pH 3.3.
