2022 Gamay 'Le Cœur'

Winemaker's Notes:

Captivating scents of raspberry jam, other red berry notions, plus cinnamon hearts and red licorice.  A tip of the glass finds it nimble and bright, tasting of sour cherry and pomegranate, with a spry peppery twist leaving a fresh sensation.

Grapes were hand-harvested between the 3rd and 7th of October from two Winery Estate blocks.  Older vines on the north side of the Estate supplied 71% of the fruit, and the remainder came from a younger block. Grape sugars from both averaged 22.9° Brix.

Whole grape clusters, divided by site, were directed to small stainless-steel “pots”.  Purged of oxygen, the vessels were sealed 10 days for carbonic maceration.  Alcohol fermentation was completed over the following two weeks, after which the wines were pressed and blended into a single tank.   Six months later this wine went to bottle.

At the time of bottling, alcohol measured 12.5%, residual sugar: 0 grams per litre titratable acidity: 6.2 grams per litre and pH: 3.4

Dry: 0 g/L residual sugar
