Winemaker's Notes: 

Pouring delectably ruby red and mousseux, a glass proposes strawberry, apple, honey, sarsaparilla, and a flinty underlay to the nose. Fresh, lively and ample, a taste reveals flavours of sour cherry, toast and baked apple braided through the finish.

Made from Moira Vineyard-grown pinot noir, hand-picked at 18.1° Brix, the grapes were whole-cluster pressed and fermented in older French oak barrels.

Vinified in the Traditional Method, with tirage in April 2020, was aged on the lees 24 months before disgorgement in May 2023.

Alcohol:  12%  Residual Sugar:  8 g / L; Titratable Acidity:  10.6 g / L; pH:  3.01

Enjoy now to 2028.

Alluring aromas of exotic spice, mineral notes and plenty of tang and pizzazz capture your interest on the palate and persist through the finish and aftertaste, along with a saline and flinty mineral note that will tempt you to come back for more. You might want to pick up a few of these for the balance of 2023 and beyond to 2026. Give this a try with a plate of sushi, or a charcouterie board.

Powerful and intense sparkling wine from Pinot Noir. Classic bouquet of biscuit, brioche and nuts. Brisk acidy drives this wine through to a bright finish.

This is a bright, forward and fruity rosé bubbly in the traditional method from Malivoire, with attractive red cherry-raspberry-strawberry fruit, essentially dry and balanced on the palate with comfortably fresh acids and solid length and depth. really quite a lovely rosé for the money, sophisticated and elegant, well-made. Quite lees led, with brioche, red currant, raspberry, cherry across a brisk, dry palate. Smart pink for drinking now, and capable of tackling numerous foodstuffs.

Just a year later, likely a new disgorgement so slightly differing wine but all things being equal, well - same, same. Still a matter of red fruit, mild bitters and toasty nuts yet the first is stronger than the following two. Crunchy tempura bits put this on the sushi radar. You know what to do next. Lightly toasted blanc de noir, quite strawberry, airy, open-knit, fragrant and floral. Energy and vitality very much present, accounted for and lifting the palate. A hint of bitters, like almond though tender and adding to the vigour. Crisp, fresh, crunchy and willing, to punch, pique and please. Simplicity at its sparkling best. Drink 2021-2023.
