Winemaker's Notes:

Surging bubbles, pale-rosy-gold into the glass, its aromas propose strawberry, pink applesauce, sour cherry and baking spice.

It’s mouth-filling, round and zesty, flavoured of Granny Smith apple, apricot, ruby grapefruit curd and pie pastry.

Vinification Notes

The fruit was whole-cluster pressed and fermented in older French oak barrels. Vinified in the Traditional Method with tirage in June 2023, the wine aged on the lees for two years before disgorgement. Production filled 165 cases.

Alcohol: 12% Residual Sugar: 8 g / L; Titratable Acidity: 9 g / L; pH: 3.08

Near 8 ° C alongside smoked salmon, sushi, brie and prosciutto cheeses or kettle chips.

Just a year later, likely a new disgorgement so slightly differing wine but all things being equal, well - same, same. Still a matter of red fruit, mild bitters and toasty nuts yet the first is stronger than the following two. Crunchy tempura bits put this on the sushi radar. You know what to do next. Last tasted November 2022.
Lightly toasted blanc de noir, quite strawberry, airy, open-knit, fragrant and floral. Energy and vitality very much present, accounted for and lifting the palate. A hint of bitters, like almond though tender and adding to the vigour. Crisp, fresh, crunchy and willing, to punch, pique and please. Simplicity at its sparkling best. Drink 2021-2023. Tasted blind at NWAC2021, October 2021.

Quarterly shipments are winners

Love the ability to modify the quarterly shipments and add several other selections for the free shipping. Not sure how long we have been members but we have never been disappointed and in the very rare times we wanted to postpone a shipment, it was zero problems.

It’s a staple in my wine fridge.

Mouthwatering delicious, refined, textured, pretty outstanding stuff. It’s a favourite and I’d say some of the best sparkling in Canada.

It certainly helps when your vines also produce some of the best fruit in the Province and Country. The two Bisous NV sparkling wines, year after year, produce remarkable fruit forward wines with pleasing palate cleansing fresh acidity and persistent elegant finish. These bottles always provide immense pleasure sip after sip, glass after glass, bottle after bottle LOL. Exceptionally well made lees aged sparkling wine that will always be stocked in my cellar and should be stocked and enjoyed by every sparkling wine lover.

I bought this back in April when it was first released and saved it for a sunny day. Just opened it today. Man it's good! If you like a sparkling wine with lots going on, this is the one for you.
