Winemaker's Notes:

Fresh, gently perfumed aromas identify peach, apple, watermelon, pear and biscuit. Gently moussant, this sparkling rosé presents strawberry, wild cherry and honey, leaving a toasty finish with a mineral shadow.

Made from handpicked, estate-grown pinot noir, whole-cluster pressed and fermented in older French oak barrels. Vinified in the Traditional Method. Aged on lees:  In bottle for 33 months.  Disgorged June 2017.

Alcohol:  12%  Residual Sugar:  11 g / LTitratable Acidity:  9 g / L pH:  3.1 Enjoy now to 2020. Only 229 cases were bottled (6 bottles/case).

Food Companions:

Extremely food friendly with a wide variety of foods. Try with creamy risotto or chicken with slow-roasted tomoatoes.
