#8 - EVOLUTION OF THE CELLAR

“We are driven to change the face of winemaking in the area” said Martin Malivoire, speaking to the media as his winery completed its first crush.  

The commitment to gravity was only the first of his ventures off the beaten path.  Martin cherished wine’s centuries-old traditions, but he knew that with more tools, some old-fashioned, some innovative, come more options for exploration and originality.  
 
From the adoption of new materials through concrete and ceramic wine vessels, to large-capacity long-term cooperage for red wines, to direct-to-press extraction for rosé, new tools and techniques have kept a steady march through the winery.
