2021 Old Vines Foch

Winemaker's Notes:

Unfailingly good-natured, Foch declares itself with rustically fragrant black cherry, raisin, tobacco and nutmeg. It’s assertive on the palate with spiced flavours of tart cherry and celery root, trailing to a toasty, earthy, herbal finish.

From the Quarry Ridge Vineyard, established in 1972 by the Reimer family. Picked on September 27th when grape sugars averaged 20° Brix.

After primary and full malo-lactic fermentation in stainless steel, the wine aged 17 months in American oak barrels, of which 18% were new, before being bottled in March 2023.

Dry: 0 g/L sugar

At the time of bottling, alcohol measured 12%, 0 g/l residual sugar, 8.3 g/l titratable acidity and 3.66 pH.

Food Companions:
Serve near 14° C with roasted or barbecued meats such as game, lamb burgers or short ribs.

Cellaring Tips:  Enjoy now to 2030.  If you haven’t had the opportunity to enjoy a back vintage Old Vines Foch yet then now may be the ideal time to start the process.  Simply squirrel away one or two bottles a dark corner of your home that has moderately constant temperature (a closet floor does nicely).  Perhaps even add a note with your intended 'When to Open Date' like ... save until Dec 2025 or even longer if you’re feeling adventurous.

Of course, make sure that you have enough to enjoy while you wait!

Vegan friendly.
