Winemaker's Notes
Exotically scented of apricot, peach brandy and almond with a mineral touch.
The mouthfeel is rich and honey-like, while flavours imply pear, apricot and pineapple.
Picked at the Genova Farm Vineyard on the evening of December 18th when temperatures dropped to minus 10° C and grape sugars averaged 39.5° Brix.
After fermentation and three months to mature and settle in stainless steel, 101 cases of icewine were bottled in April 2020.
At the time of bottling, alcohol was measured at 9 %, residual sugar 260 grams per litre, titratable acidity 14.4 grams per litre and pH at 3.09. 200 ml / bottle
