2016 Stouck Merlot
Winemaker's Notes:
A swirl coaxes suggestions of blackcurrant, blueberry, plum and mocha. The wine has an abundant, smooth texture that will further refine with age. Flavours imply cocoa and cherry strudel with lingering oak-caramel undertones.
Picked at the Stouck family Vineyard on October 26th as grape sugars averaged 25.3° Brix.
Following primary and malo-lactic fermentation, 60% of the wine transferred to neutral barrels (60% American oak and 40% French oak) to age for 18 months. The remainder of the wine aged for eight months in new American and French oak, then was transferred to neutral oak for a further 10 months before going to bottle in April 2018.
At the time of bottling, alcohol measured 13.5%, residual sugar 0.5 grams per litre, titratable acidity 6.3 grams per litre and pH 3.66. Vegan friendly.
