Winemaker's Notes
A swirl of the glass coaxes softly perfumed red berry, dark fruit and fragrantly earthy tones with hints of vanilla and dark chocolate. A taste finds a bright and deep texture with flavours recalling plum, raspberry, cherry and truffle, holding some savoury herb through the finish.
Picked by hand at the Moira Vineyard on September 17th as grape sugars averaged 21.4° Brix.
For this micro-cuvée, 80% of the hand-sorted grapes were de-stemmed and the remainder kept in whole clusters. All were layered into a stainless-steel tank. Primary fermentation lasted 15 days. The wine was transferred to neutral (average 6-year-old) French oak barrels to complete malolactic fermentation and age for almost nine months.
Quantity bottled in July 2021 was 49 cases. Less than 30 cases remain.
At the time of bottling, the wine was measured at 12.5% alcohol, 0.2 grams per litre residual sugar, 6.1 grams per litre titratable acidity and 3.65 pH.
